Robin's Pot Pie Recipe (Vegetarian-Friendly)
March of Dimes Recipe of the Month (2-4 Servings)

Ingredients for pot pie:
  • Pie crust (top and bottom crusts)
  • ½ cup of unbleached all-purpose flour (Arrowhead Mills or King Arthur Flour)
  • 1 tbsp. of nutritional yeast (available in bulk)
  • 1 tsp. of salt (available in bulk)
  • ¾ cup of garlic powder (available in bulk)
  • 1 lb. of firm tofu, drained and cut into ¼-inch cubes (House Foods)
  • 4 tbsp. of cooking oil of your choice, divided
  • 1 cup of finely chopped onion
  • 1 cup of sliced celery
  • 1 cup of sliced carrots
  • 1 cup of other veggies (peas or green beans)
  • 2 cups of chickenless gravy
  1. Combine the flour, nutritional yeast, salt and garlic powder in a paper bag. Shake to combine the ingredients. Add the cubed tofu in the bag and shake to coat. Sauté the tofu mixture in 2 tbsp. of oil in a large skillet until it gets lightly browned. Pour it into another dish and set aside
  2. Add the remaining 2 tbsp. of oil to the skillet and sauté the onion, celery, and carrot until the onions become soft (about five minutes). Add other veggies and cook until the veggies become tender and crisp (another five minutes)
  3. Preheat oven to 375 degrees. Add the tofu and gravy to the vegetable mixture and stir. Pour this mixture into the pie shell. Roll out top dough and place on top. Crimp edges and cut vents in top. Bake for 30 minutes or until the crust becomes lightly browned
Ingredients for chickenless gravy:
  • 2 cups of boiling water
  • 2 tbsp. of extra virgin olive oil
  • 3 tbsp. of nutritional yeast
  • 1 vegetable bouillon cube
  • ½ cup of diced fresh mushrooms (optional)
  • 1/3 tsp. of onion salt
  • Unbleached all-purpose flour
In a saucepan, simmer all the ingredients except flour for 5 minutes. Slowly add the flour, whisking constantly after each addition until the desired thickness is reached.

Matcha Hemp Chia Pudding (Single Serving)
Vegetarian and Vegan-Friendly

  • 1-½ cups of unsweetened hemp milk - raw and homemade is preferred 
  • 1-½ tbsp. of maple syrup
  • 1 tbsp. of Aiya Cooking Grade matcha powder
  • ½ tsp. of vanilla extract
  •  ¼ cup and 2 tbsp. of chia seeds
  • Sliced banana, blueberries, and almond butter for toppings
  1. Blend everything except the chia seeds in the blender. Pour the mixture in a large glass container and add the chia seeds
  2. Place the container in the fridge for 8-10 hours to thicken up, stirring once or twice. Once the chia pudding has thickened up nicely, enjoy as is or create your parfaits
  3. Parfait assembly: Place a layer of chia pudding at the bottom of a glass, top with sliced banana, some blueberries, and a spoonful of almond butter. Place another layer of chia pudding, top with more banana, blueberries, and almond butter. You can have it for breakfast, as a snack, or a dessert! Store in your fridge

Raw Superfood Cookies (About 15 Cookies)
Vegetarian and Vegan-Friendly

  • 1 tbsp. of chia seeds
  • 1-½ cups of dates
  • 1/4 cup of raw almonds
  • 3/4 cup of oats
  • 2 tbsp. of ground flaxseed
  • 2 tbsp. of hemp seeds
  • 1/4 cup of shredded coconut
  • 2 tsp. of cinnamon
  • 1 tbsp. of raw maca powder
  • 2 tsp. of water
  • 1 tsp. of hemp oil or coconut oil
  1. Add all the ingredients, except water and hemp oil, to a food processor and process until a clumpy, crumbly mixture forms
  2. After it has become crumbly, add oil. Add water while the processor is running. The mixture should start to stick together
  3. When the dough is formed into one large clump, remove it from the food processor. Roll it into balls and flatten with a fork or roll it between two sheets of parchment paper and use a round cookie cutter to cut out the cookies
  4. Place cookies on a baking tray and refrigerate until hard. If desired, add a ½ tsp. of jam to the center
